Functional Overview

Seeking an Executive Chef who will be responsible for the operation and management of the restaurant and dining facility at a resort location.

Dunrovin is Whirlpool Corporation's private 155-acre conference center and retreat. On site recreation including fly fishing, tennis, skeet range, trails and more. Food and beverage is focused on fine, modern cuisine and wines.

The Executive Chef is expected to create their own menus and will focus on producing outstanding/sophisiticated¬ cuisine. You must be a great communicator and hands-on leader.

The ideal candidate will be dynamic, energetic, keen and personable. A self-motivated professional who excels in service, strives for excellence and has excellent leadership, teaching and training skills and not be afraid of getting your hands dirty. Ability to manage in a diverse environment with a focus on client and customer services.


Job Responsibilities:

  • Channel your culinary passion into all aspects of Dunrovin's food operations. ¬ You will focus on exceeding both guest and staff expectations.

  • Lead an energized, inspired kitchen. ¬ Create an atmosphere that fosters teamwork and elicits constructive feedback. ¬ Lead a diverse team by modeling the way, by empowering, and coaching throughout the employment lifecycle. ¬ Oversee the safety of the environment and food for staff and guests.

  • Create with a passion to delight. ¬ Demonstrate individuality in your menu conceptions and be willing to implement new cooking techniques. ¬ Take pride in your dishes and main consistency in taste and quality.

  • Flexible hours depending on demands of the kitchen. ¬ Covering for staff as needed for breaks and meal times. Peak season time is March - November. Remainder of year will be spent on additional training, education, etc.

  • Chef will train and manage all kitchen personnel. ¬ Responsible for hiring, training and performance reviews.

  • Oversee all operations of the day to day running of the department ensuring quality. ¬ Rectify any problems that may arise before and during service.

  • Select or develop recipes for monthly (weekday) menus and test with staff 30 days prior to the start of the menus. ¬ The menus will focus on light / healthy and can be based on both classic and contemporary recipes and will include Breakfast, Lunch, Dinner as well as Vegetarian and Vegan. Take photos and have recipes on file to support the menu. ¬ Develop weekend menus as soon as information is available.

  • Standardize recipes to ensure consistent quality. ¬ Establish presentation techniques and quality standards.

  • Create variations of serving styles and incorporate experiential dining options, including group settings outdoors.

  • Banquet style service

  • Estimate quantities of food needed and purchase food. ¬ Work closely with food purveyors to ensure quality of products and competitive pricing.

  • Ensure proper equipment operation and maintenance as well as proper safety and sanitation in the kitchen.

  • Schedule team and individual meetings (as required). ¬ Go over upcoming agenda and answer any questions or concerns staff may have.

  • Perform all administrative duties related to operation of the department.


Minimum Requirements

  • Culinary Arts Degree OR 5+ years of professional cooking experience

  • 5+ years of experience leading and training culinary teams

  • 5+ years experience creating and developing recipes and menus


Preferred Requirements

  • Experience working in a destination resort

  • Banquet style experience

  • Experience with Pre Fixe menu

  • Experience cooking sophisticated cuisine (French, Italian, Mediterranean, Fusion, etc.)

Don't Be Fooled

The fraudster will send a check to the victim who has accepted a job. The check can be for multiple reasons such as signing bonus, supplies, etc. The victim will be instructed to deposit the check and use the money for any of these reasons and then instructed to send the remaining funds to the fraudster. The check will bounce and the victim is left responsible.
